2011 Tennessee Beef Backer

Sperry’s Restaurant has been selected as the 2011 Tennessee Beef Backer winner by the Tennessee Beef Council for its innovative efforts in beef menuing and promotion.

The Tennessee Beef Backer Award program honors commercial and non-commercial foodservice operations that exhibit leadership and creativity with beef products. Sperry’s was selected based on:

  • Creativity—Using beef in fresh ways that showcase its menu versatility;
  • Quality—Consistent excellence of beef menu items;
  • Quantity—Beef menu share and/or beef used in multiple day parts (e.g., breakfast, lunch, dinner);
  • Communications—Advertising and promotion featuring beef;
  • Coaching—Waitstaff training to enhance beef sales and the dining experience;
  • Cooperation—Relationship with State Beef Council;
  • Cuts—Use of innovative or new beef cuts (e.g., Flat Iron, Petite Tender, Ranch Steak, Delmonico, Boneless Country-Style Beef Ribs, Round Petite Tender).

“Sperry’s is an excellent partner to the Beef Industry and an expert on our product,” said Valerie Bass of the Tennessee Beef Council. “Beef is their business and they showcase excellence in every way from their overall dining experience to their wait staff service right down to the impeccable way it is prepared. Representing Tennessee, Sperry’s Restaurant will now go on to compete against other state winners at the National Beef Backer Competition. The winner of the national competition will be recognized at the 2012 Cattle Industry Annual Convention, which will be held Feb. 1-4 at the Opryland Hotel in Nashville.

“Our restaurant and staff take pride in the quality and presentation of the beef we serve and we are honored to receive this award from the Tennessee Beef Council,” said Al Thomas, co-owner of Sperry’s.
